1/2 cup good quality olive oil
1 or 2 cans flat filets of anchovies in olive oil- dont drain the can, use it all.
2 cloves garlic chopped fine
1/2 the zest off a lemon also finely chopped
juice of the 1/2 lemon
some fresh basil or parsley
1/2 can of straw mushrooms in water- add the water to the pan
a sprinkling of capers
Boil water for pasta. Skip the salt (Anchovies add plenty)
Put all your ingredients in a medium frying pan. Turn the heat on to medium until the oil starts to bubble then turn to lowest setting.
When your pasta is cooked, the sauce is done.
Serve tossed with parmesan. The no fish & milk rule doesn't apply to anchovies (at least as far as I'm concerned it doesnt...).
A lemony salad dressing or lemon spritzed veggies are a good side with this.
