E is for Endive and Elderberry or, a teeny tiny cocktail party.

Stuffed Belgian Endive appetizers
 
Rinse a head of Belgian Endive and separate the leaves from the core. Arrange these on a tray. Take one can of tuna in olive oil (drain some of the oil off), add 2tbsp mayonnaise, 1tbsp capers, 1 chopped roasted red pepper. Scoop about 1tbsp of the mixture into your endive leaves.

Or fill the leaves with a tsp of labneh (or cream cheese) a bit of red onion and some smoked salmon.


Elderberry

Here's is a recipe for Elderberry Liquor from the fabulous site, Hunter, Gardner, Angler, Cook. In a tumbler, pour 1oz vodka and 1 oz elderberry liquer. Add the juice of 1/2 of a lemon. Top with tonic water and a slice of lemon. If you don't want to make your own elderberry liquor, you could substitute St. Germain (which has a fabulous website) & is made from Elderflower or Kir in this.

The sweet-tartness of this drink is a nice counterpoint to the salty fishiness of Tuna or Salmon. Now you got yourself a party~!

  3. Elderberries are in the currant, wild blueberry family of tart to sweetness...
    They can be hard to find fresh, but I've seen them frozen and dried quite often.
