J is for Jackfruit and Jicama

Jackfruit
Here we go again with another fruit I've never seen, much less eaten. The Jackfruit is impressive anyway. There's actually a video on YouTube and evidently you need a nice Jamaican guy with a HUGE knife to talk the fruit through being butchered (look at the size of it! you can't call this slicing it...)
  




Jicama  Slaw
There used to be a restaurant in Tucson, AZ where you could get a sandwich with a big batch of Jicama Slaw on the side. I liked to load mine into the sandwich.
So get a Jicama and peel it. Use a Mandoline or a knife to matchstick it. Matchstick 1/2 a small head of white cabbage and a couple of carrots. Chop up a bunch of green onions. Toss these vegetables together. In a small bowl, combine 1/2 cup rice vinegar, 1tbsp coconut oil, 1 clove of garlic (finely chopped), 1tsp powdered ginger, plus salt or soy sauce, pepper and some fresh cilantro, if you like it, to taste. Pour over vegetables. Let sit for at least a few hours, I like to use a gallon plastic bag for this so I can toss the veg around easily every once in a while.
