When I am organized enough to make burritos ahead of time and freeze them, I can save lots of money over buying lunch at work and I just feel so darn virtuous.
1 16oz. can black or pinto beans (I like Goya)rinsed.
1 4oz. can chopped roasted green chiles
1 clove garlic
pepper
4 large whole wheat tortillas
1/2 cup cheddar cheese
1 jar of salsa (your choice)
about 8oz. of leftover meat (chicken, Pork or Beef OK)
Heat the beans, chiles, garlic and pepper in a saucepan until the beans are warmed through and the garlic softens. Spoon 1/4 of the beans onto each tortilla, top with cheese, salsa and some of the meat (if you like). Fold into a burrito.
Place the burritos on a parchment lined cookie sheet. Freeze until solid (about 12 hours) and then you can store them in ziplocs.
To heat- 20 min in 350 degree oven or about 7 min on defrost in the office microwave.
Watch as your jealous co-workers resentfully chew their $9 ham sandwiches...
