A to Z Challenge - B

B is for a head of Broccoli yelling at a Banana...

Banana Smoothie:
2 frozen bananas
1/2 cup almond milk
2 dates pitted
Blend your dates and almond milk first, then add the banana. Delicious breakfast.

Broccoli Soup
Clean two heads of broccoli and chop finely. In a large saucepan, saute 2 onions & 6 cloves of garlic, with about 2tsp olive oil. When your onions are translucent, add the broccoli and stir fry until the broccoli begins to brown a bit. Add 5 cups of chicken stock and simmer until broccoli is cooked through, season with salt and pepper.
.
In a frying pan, make a roux of 1/2 cup butter and 1/2 cup flour (if unfamiliar, look this up, you want it to be quite light in color). Turn the heat off under your roux and whisk in about 1 1/2 cups of cheddar cheese. When this is smoothly melted/ blended- add it to your broccoli soup, stirring constantly. Don't let the soup boil, it will break and lose its creamy consistency. Season with salt and pepper and serve immediately.

  2. I like the banana smoothie and I just heard about a banana gelato made with a frozen very ripe banana blended with Nutella and a spoonful or two of frangelico. Yum

  3. That's a good idea to add cheese to broccoli soup. I made it once (without cheese) and it was terrible. It definitely needed an extra something for depth.

    1. Its easy to make gross broccoli soup. The roux and the cheese really help, season it as you go, too. Good luck.
