R is for Radishes and Raspberries

 Radishes

Ways to serve radishes-
sliced in a salad
cut off the tops, use a pastry bag to squirt some butter, sprinkle with salt, put top back- pop in mouth
with olive oil, coarse salt and pepper
cooked in butter over pasta with spinach or chard
chop finely and add to tuna salad or potato salad


Raspberry mousse

All rasberry mousse recipes involve cooking the berries with sugar and gelatine to make a thick syrup and then blending it with a dairy product (either cream or yogurt). For something a little lighter:

3 cups rasberries
1/2 cup honey
1 block silken tofu
1/4 cup sesame tahini
2 tsp. vanilla

Blend the honey, tofu, tahini and vanilla in the blender. Fold in the rasberries. Chill and serve. So decadent but really pretty healthy. (Serves 4)
