S is for Spinach and Strawberries
Spinach and egg pie
1 brick frozen chopped spinach (thawed and drained)
1/2 cup 1/2 and 1/2
1 cup gruyere cheese- grated
2tbsp whole wheat flour
salt and pepper to taste
Grease and flour a 10" tart pan. Put the cheese and spinach in the pan. Mix everything else in the blender and pour it over the spinach/ cheese mixture. Bake at 350 for 25-35 minutes or until just set in center. Serve cooled in slices.

The only change I make is using only a 1/4 tsp of salt.
Follow the recipe for honey-champagne syrup as well. Make the syrup and pour it over your berries (you'll need a couple of pints).
For the whipped cream- 1 pint whipping cream, 1 tsp sugar, 1 tsp almond extract.
