Shiitaki Mushroom Salad

Yesterday, Spinney's had shiitaki mushrooms on sale for 56dhs a kilo. That's about $6 lb to you and me. I pulled the stems off and sauteed the caps with olive oil, lemon juice, some fresh garlic and a bit of powdered ginger. When they were mostly finished, I splashed them with some white wine.

I served the mushrooms hot over arugula tossed with lemon juice, salt and pepper.
A lovely lunch.
